Roasted Cherry Tomatoes and Burrata

recipe
Cook time
40 mins
1 pint cherry tomatoes
2 tbsp olive oil
1-2 balls burrata cheese
flaky sea salt (e.g., Maldon's)
cracked black pepper
thyme leave (optional)
additional high quality olive oil for drizzling
  • 1. Preheat oven to 350°
  • 2. Drizzle olive oil in a baking dish
  • 3. Add tomatoes to baking dish. Move them around in the dish to ensure they are sufficiently oiled and will not stick to the dish once done.
  • 4. Bake for 30-40 min, or until desired doneness. They should look slightly wrinkled with some browned spots on the skin. I prefer them to be on the more done end of the spectrum which results in a sweeter flavor.
  • 5. Remove from oven and prepare your serving plate.
  • 6. Place burrata in the center of the plate and surround with tomatoes and toasted bread.
  • 7. Drizzle burrata with high quality olive oil, and sprinkle with flaky sea salt and cracked black pepper. Garnish with thyme leaves and serve.
